Gluten, Dairy, Soy, Grain Free, Low Carb – Paleo

Ingredients:

Dry:

¾ cup almond flour
1 ½ tbsp. coconut flour
1 tsp. baking soda
¼ tsp. sea salt or Himalayan pink salt
3 tsp. organic psyllium husk
1 Tbs. chia seeds
1 Tbs. ground flax seeds

Wet:

¼ cup hot water
3 pastured eggs +1 egg white
1 tbs. organic apple cider vinegar (Bragg’s or Brad’s are good brands)

Directions:

Grease the bottom of a loaf pan (can use coconut oil or Nutiva Shortening is a great product). Preheat oven to 350

Combine dry ingredients in a small bowl

Combine the eggs and apple cider vinegar, whisking well. Stir in the dry ingredients to combine.

Pour in hot water and stir vigorously to distribute. Mixture will thicken and come together (like magic!)

Spread into prepared pan. Transfer to oven and bake 35 minutes or until a toothpick comes clean.

Let cool on a rack and when completely cool store in an airtight container.

For slices the size of most breads – double the recipe and slice them thinner.

This bread toasts very well.

Spread with Almond Butter and Apple slices and top with cinnamon for a quick grab ‘n go breakfast.
