Serves 4

INGREDIENTS:

1 lb. grass fed beef cubes for stew
Extra Virgin Olive Oil for browning beef and onions
6 small organic potatoes cut in quarters
1 lb. whole mushrooms (cleaned and cut in half)
1 4 large carrots cut in 1 inch chunks
1 large onion cut in 1 inch chunks
4 stalks celery cut in 1 inch slices
2 cloves fresh garlic minced
2 springs fresh thyme
1 small handful fresh chopped Italian parsley
½ cup organic beef bone broth
Himalayan Pink Salt and Freshly Ground Pepper to taste

METHOD:

Heat oil in skillet and brown beef on all sides. Remove beef to crock pot. Sauté onions and celery until slightly browned add garlic and sauté for 1 minute. Add to crock pot. Then add carrots, potatoes, herbs and bone broth. Cover and cook on low setting for 6-8 hours.
