Serves 4

INGREDIENTS:

2 cups seeded, diced plum tomatoes
1 cup sliced white onions
2/3 cup chopped pimento stuffed olives
2 tbs. capers
2 tbs. fresh lemon juice
2 tsp. minced fresh garlic
4 white fish filets (cod works well and is reasonably priced)
2 red or green jalapenos sliced
2 small lemons thinly sliced
4 squares of parchment paper

METHOD:

Preheat oven to 400 degrees. Fold four pieces of parchment paper in half on the diagonal so they form triangles. Combine tomatoes, onions, olives, capers, lemon juice and garlic in a bowl. Divide mixture into four portions. Place each portion of mixture on parchment paper (oily side up) near fold. Place filet on top of mixture, then jalapenos and lemon slices.
Fold triangle over and begin to fold edges one over the net along the edge of triangle until it is sealed. Transfer packets to baking sheet and bake 20-25 minutes.
