Makes 4 wraps

Ingredients:

8 slices gluten-free, nitrate/nitrite free deli turkey (Trader Joe’s; Applegate Farms)

8 slices gluten-free bacon, nitrate/nitrite free cooked
1 avocado, thinly sliced
1 firm plum tomato, thinly sliced
4 large lettuce leaves (Boston or Bibb work very well)

For the Basil-Mayo:

1/2 cup quality mayonnaise (www.primalkitchen.com)
6 large basil leaves, torn
1 teaspoon lemon juice
1 garlic clove, chopped
salt
pepper

Method:

Mix together ingredients for Basil-Mayo. Set aside.
Wash and dry lettuce leaves. Place 2 slices turkey, 2 slices bacon 1 or 2 slices avocado, 1 slice tomato on each leaf. Top with a dollop of the mayo and roll up. You may have to secure the wrap with a toothpick.
